Greek fava
Fava is a popular Greek appetizer made of yellow fava peas with onions and capers, which can be found in every taverna. Tastes great with toasted white bread.
Ingredients:
- 300g split peas
- 1 large onion
- juice of half a lemon
- 6 - 8 tablespoons Minos Extra Virgin Olive Oil
- Salt & pepper to taste
- Olives, capers and onions for garnish
Preparation:
Preparation time: approx. 30 minutes
Difficulty level: easy
1) Rinse split peas thoroughly and cook according to package directions
2) Peel the onions, dice finely and sauté in olive oil
3) Add the fried onions to the peas in the pot and toss to combine
4) Puree the mass with a hand blender to a fine mush, add approx. 6 tbsp olive oil and the juice of half a lemon and stir well
5) Season with salt and pepper
6) The dip tastes particularly refined when lukewarm and can be garnished with onions, olives or capers and a little olive oil
