Tuna fillet with green beans and potatoes is ideal for a light lunch or dinner. Serve with a glass of dry white wine and a fresh green salad for a completely Mediterranean experience.
Ingredients for 2 people:
- 2 tuna fillets
- 4 garlic cloves, finely chopped
- 4 tbsp Minos organic extra virgin olive oil
- 1 lemon
- 1 teaspoon dried or fresh herbs (e.g. thyme, rosemary, oregano)
- Salt and pepper to taste
Green beans with potatoes:
- 200 g green beans, cleaned and halved
- 2 medium-sized potatoes, peeled and cut into cubes
- Salt and pepper to taste
Preparation:
Preparation time: approx. 45 minutes
Difficulty level: easy
- Rinse the tuna fillets under running water and pat dry with kitchen paper.
- In a bowl, mix the Minos Organic extra virgin olive oil with the chopped garlic, herbs (thyme, rosemary, oregano), the juice of half a lemon, salt and pepper to make the marinade.
- Place the tuna fillets in the marinade, making sure they are well covered. Leave to marinate in the fridge for at least 30 minutes, but ideally longer for more intense flavour.
- Pre-cook the potato cubes in boiling salted water for about 5 minutes until they are slightly soft but not completely cooked.
- Add the green beans and cook until the beans are cooked through but still crunchy, about 5-7 minutes.
- Meanwhile, preheat a pan over medium heat and fry the marinated tuna fillets for about 2-3 minutes on each side until golden brown and cooked to your desired level.
- Drain the beans and potatoes and arrange them on a plate with the tuna.
- Cut the remaining lemon half into wedges and place them on the plates.
- Top everything with a generous splash of our Minos organic extra virgin olive oil and enjoy.
